One of my new years resolutions is to meal plan each week and try to lower our food budget so that we are able to save more money. I have done lots of searching online for easy and inexpensive dinners. I thought I would share a few of them with you! If you would like more details then those provided in post, click on the image for full ingredient list and recipe.

1. Crispy Cheddar Chicken
Halve some chicken breasts, and dip them in milk, cheddar, and crushed Ritz crackers or breadcrumbs. Then bake at 350 for 30 minutes.


2. Pesto Chicken Bake
Trim your chicken breast and lay them in a glass baking dish. Spread about 1-2 tablespoons of prepared pesto. Slice 1-2 roma tomatoes into 1/2″ thick slices and lay them on top of the pesto. Sprinkle mozzarella (or Italian blend cheese) over the whole thing. Bake at 400˚F for 30-40 minutes or until the chicken is cooked through and the juices run clear.


3. Crock-Pot Salsa Verde Chicken
Season chicken with garlic powder, oregano, cumin and salt and place in the bottom of the slow cooker. Cover with salsa verde, cover and cook HIGH 2 hours.


4. Baked Tilapia in Foil or Parchment
Preheat oven to 425. Lightly spray 2 large sheets of foil or parchment paper with cooking spray. Slice lemon into 8 slices and discard the 2 end pieces. Place 3 slices of lemon horizontally in the center of the foil. Place handful of spinach on top of lemon. Place seasoned tilapia filets on top of spinach, drizzle with a little olive oil, and place thyme sprigs on top of fish. Fold up packets and place in preheated oven on baking sheet. Bake for 20 minutes and remove from oven. Allow to rest for a few minutes before opening packet. Discard lemon slices and thyme sprigs, serve, and enjoy!


5. Slow Cooker Chicken Tacos
Toss in a 16oz jar of salsa and add a packet of taco seasoning. Mix and then add your chicken. Make sure the chicken is completely covered by the salsa and taco seasoning mixture. Cook on high for 4 to 6 hours. Shred chicken and add toppings of your choice.
