How easy is it to just bring a macaroni salad when you’re invited to a friend’s summer dinner party or barbecue? It’s time for you to move out of your comfort zone and try some yummy and healthy alternatives. Don’t worry, this recipe is super easy to make and doesn’t need that many ingredients!
Avocado & Black Bean Salad with Lime
What You’ll Need:
2 15-ounce cans black beans
3 ears corn
2 red bell peppers
2 cloves garlic
2 tablespoons shallots
2 teaspoons salt
1/4 teaspoon cayenne pepper
2 tablespoons sugar
9 tablespoons extra virgin olive oil
1 teaspoon lime zest
6 tablespoons fresh lime juice
2 Hass avocados
Note: I nixed the cilantro the recipe calls for because it’s not my favourite. Go ahead and add some if you like the taste! Also, I recommend adding more avocado. Because…WHY NOT??
