I love a nice cup of hot cocoa with marshmallows in it! Did you know that its actually super easy to make your own marshmallows at home? All you need is a few basic ingredients and a hand or stand mixer. I can’t wait to make these for my next hot cocoa night, my drink NEEDS these marshmallows! Side note: these mallows are perfect for SMORES too!


What you’ll need:
1 cup water
3 envelopes unflavored gelatin
2 cups granulated sugar
½ cup light corn syrup
½ tsp salt
2 T vanilla extract
1 cup powdered sugar
1 cup corn starch


Start off by greasing a 9 x 9 square pan with butter and set aside.


In the bowl of your stand mixer, pour in 1/2 cup water.


Sprinkle your 3 envelopes of gelatin on top.


Move over to the stove, and in a medium saucepot bring corn syrup…




and water to a rolling boil for 1 minute…


or until a candy thermometer reads 240 F.  Do not stir this mixture while it cooks.


In your stand mixer, mix the gelatin to break up the clumps, then slowly drizzle your sugar syrup along the sides of the bowl.


Turn your mixer to high speed and whip for 8-10 minutes until thick and fluffy.


Immediately pour out into your prepared pan. Greasing your spatula helps with this process too.


Spread the mixture out, and then use a greased sheet of plastic wrap to make it even smoother.


Sprinkle your work surface with a mixture of half corn starch and half powdered sugar.


Turn our your marshmallow slab out onto your surface and start cutting!


Use a greased knife to cut about 16 large marshmallows or 64 1-inch marshmallows. You can also use greased cookie cutters for this.

Tip: To clean your saucepot, just fill with warm water and let soak for 1 hour. The sugar will dissolve quickly, and the pan will be completely clean!
